My sweet tooth has been on fire these last few weeks!
I have been working on slowly reducing my sugar intake over the past few months and was actually doing okay. I went from 3 daily cups of coffee sweetened with 4 teaspoons of sugar to 1 cup sweetened with only 2 teaspoons! I’ve also stuck to having only one chocolate bar a week as opposed to however many I can sneak past my fiancé.
However, over the last few weeks, I’ve noticed that I can’t do without sugar – especially dessert. I know that it’s all in my mind, but I literally feel like my meal is incomplete if I don’t have something sweet to finish it off with.
The only way I’ve found to try and alleviate my irritating new problem is to indulge in my smoothies and nice-creams (banana ‘ice-cream’) more wisely. I’ve split my usual daily smoothie to post meals instead of as one afternoon snack. Last night, I was feeling the need for some variety in my dessert so I decided to add a little chia pudding to the mix.
Feeling a little adventurous, I topped the chia with an avo nice cream and my tastebuds haven’t been happier!

- 1 tsp chia seeds
- 80ml coconut milk
- ½ medium avocado
- 1 banana
- 1 cup spinach leaves
- 1 Tbsp Greek yogurt
- 1 tsp honey
- Add coconut milk to a small glass container or jug.
- Mix in the chia seeds and leave the jug in the fridge for 1 hour or overnight.
- Freeze all the ingredients except the yogurt and honey overnight
- Thaw for 15 minutes then add all the smoothie ingredients into a blender.
- Blend until smooth.
- Add the nice cream to the chia pudding.
- Top with your favourite fruits and seeds.
