Simple Chia Pudding with an Avo Nice Cream Topping

My sweet tooth has been on fire these last few weeks!

I have been working on slowly reducing my sugar intake over the past few months and was actually doing okay. I went from 3 daily cups of coffee sweetened with 4 teaspoons of sugar to 1 cup sweetened with only 2 teaspoons! I’ve also stuck to having only one chocolate bar a week as opposed to however many I can sneak past my fiancé.

However, over the last few weeks, I’ve noticed that I can’t do without sugar – especially dessert. I know that it’s all in my mind, but I literally feel like my meal is incomplete if I don’t have something sweet to finish it off with.

The only way I’ve found to try and alleviate my irritating new problem is to indulge in my smoothies and nice-creams (banana ‘ice-cream’) more wisely. I’ve split my usual daily smoothie to post meals instead of as one afternoon snack. Last night, I was feeling the need for some variety in my dessert so I decided to add a little chia pudding to the mix.

Feeling a little adventurous, I topped the chia with an avo nice cream and my tastebuds haven’t been happier!

This is my new favourite and I’m sure you’ll love it too!

Ingredients
For the chia pudding:
  • 1 tsp chia seeds
  • 80ml coconut milk
For the avo nice cream:
  • ½ medium avocado
  • 1 banana
  • 1 cup spinach leaves
  • 1 Tbsp Greek yogurt
  • 1 tsp honey
Instructions
For the chia pudding:
  1. Add coconut milk to a small glass container or jug.
  2. Mix in the chia seeds and leave the jug in the fridge for 1 hour or overnight.
For the avo nice cream:
  1. Freeze all the ingredients except the yogurt and honey overnight
  2. Thaw for 15 minutes then add all the smoothie ingredients into a blender.
  3. Blend until smooth.
Finish it off:
  1. Add the nice cream to the chia pudding.
  2. Top with your favourite fruits and seeds.
  3. Enjoy!
