There are only a few things better than popsicles to brave the intense African summer heat.

However, have you ever looked at the ingredients on the back of a store-bought popsicle? Most popsicles that you get at the store are loaded with sugar, high fructose corn syrup, artificial coloring and chemical flavors. And all those things have been linked with various types of cancers, behavioral problems like hyperactivity, irritability, trouble focusing, and more.  Not great for a girl trying to stay on the healthy side of life.

The solution?  Make your very own healthy popsicles!

The use of coconut water as the base of this recipe makes the popsicles even higher in nutrients and best of all, coconut water is naturally sweet!  It even has anti-cancer properties, helps feed your good gut bacteria,  it’s an anti-inflammatory and it’s loaded with electrolytes to help you stay completely hydrated.

Healthy coconut and blueberry popsicle recipe

This is a basic recipe that I LOVE but you can really have some fun playing around with this base recipe to create your own signature flavor of healthy popsicles. Mix and match fruit. Fancy them up by adding fresh herbs like mint or basil.  Add a squeeze of lemon or lime. You get the idea.  Have fun with it! And then let me know what you come up with so I can try it too!

Ingredients
  • 1 cup of your favourite fruit( I used strawberry)
  • 1 cup of coconut water
  • 1 tablespoon of honey or a sweetener of choice( amount can be adjusted to your preference)
  • Popsicle moulds or small paper cups & sticks
Instructions
  1. Blend all the ingredients with a blender until smooth
  2. Pour the liquid into your popsicle moulds
  3. Freeze until firm, about 4-5 hours

  6. Add a few frozen fruit slices of your choice (I used blueberries) into your mould
  7. Pour the coconut water and sweetener mixture into the mould
  8. Freeze until firm, about 4-5 hours
